Mmm Mmm! Monday - Big Bubba's BBQ Station

Last week, Kit and I were racing around town, running errands, and decided to grab a quick bite before we picked up the boys from my mom's. We ran through the list of fast food joints we have filed away in our minds. And it seemed as though everything I suggested, Kit refused, and every place he thought of, I vetoed. We just couldn't agree and didn't have anymore time to debate. Just then, as we rounded the corner to drive through Whataburger (our backup compromise), we stumbled upon a new (to us) BBQ restaurant. 


Finally! We could agree on something! The smell from outside was intoxicating! We walked in a trance from the car to the front door and opened it with palpitating excitement to find a quaint mom and pop dive. The only thing we could hear was the quiet hum of our favorite music playing in the background. The other customers sat without a word at the plastic covered picnic tables, mouths full of brisket, pulled pork and ribs. This looked promising!


We walked toward the chalkboard menu (I love those! Don't you?), and scrolled the list of mouth-watering options. 




It was hard for us to decide since everything looked and smelled absolutely amazing! Kit and I looked at each other and simultaneously cried, "Split-Split", which means we both pick something and split ours in half to share with each other. I picked the brisket sandwich and Kit picked the two meat plate. (Side note: I always choose brisket when I eat at a new-to-me BBQ restaurant. That is how, I believe, you can judge the amazing BBQ restaurants from the mediocre. And the BBQ sauce is the tie-breaker when deciphering which BBQ is best!)



Needless to say, it was fantastic! My brisket was perfect! So moist, flavorful and falling apart as I went in for each bite! When I asked the owner, Robert Morin, how he gets it so moist, he declined to give away his "family secret", only saying that it takes firewood and patience!




Well, whatever he and his wife, Jodie, are doing, it's great! I came back the very next day to order more (What can I say? It's that good!), and to find out about this somewhat new restaurant. Big Bubba's BBQ Station has been around since October of 2009, however due to unavoidable circumstances, the original Big Bubba had to sell his restaurant. Robert and Jodie had heard about the opportunity from his brother and decided to take a leap of faith, pack up their three girls, Jenna, Jordan, and Jocie, and move over 600 miles away (from Weslaco, TX), to take a chance on owning their own restaurant. In March of 2010, it was theirs! The couple eased into taking over as the original Big Bubba took them under his wing. Since then, however, all of the recipes have been changed seamlessly. And now it's better than ever! Here are some more pics of the food and restaurant. They look almost as good as they taste!

They also have daily specials. On Mondays you can get a one meat plate with 2 sides for only $7.99! That is a great deal! You have to check this place out! They are open Monday through Friday from 11 - 2, and 5 - 8. On Saturdays, they are open from 11 - 8. You can find them at the corner of Wadley and Midkiff in the Imperial Shopping Center, space # 14. P.S. If you're wondering, for future tie-breaking debates, they have two types of BBQ sauce, spicy and sweet. I like to mix them together for the perfect bite!
