Mmm Mmm! Monday - Funky Sandwiches

My sister, Tracy, is an amazing, creative, overworked and underpaid 3rd grade teacher. I don't know how she does it, but I do know that she loves teaching. She was blessed with more patience and understanding than I, and is a better educator/friend because of it. The boys and I recently visited her newly updated and gorgeous classroom. Her students are so lucky! Every inch of that space is decorated with informative and fun materials finished off with a sprinkle of glitter. This afternoon she will meet the lucky students and parents fortunate to have her this year. Which means, the first day of school is just around the corner. What better time than now to post the perfect school lunch! I was planning on creating a super sandwich for Kit and cutting out the crusts with a cute cookie cutter. But after a little research I found something much cooler! It's a site called FunkyLunch.com. They have a gallery of sculpted sandwiches that will blow your socks off! I am posting a few of the pictures here, but you should definitely check it out! Can you just imagine your kiddo's face when they open up their lunch box and find one of these edible art pieces created just for them? Hopefully this inspires you to get in the kitchen and create! I'd love to see what you come up with!
