Mmm Mmm! Monday - Smoked Mozzerella Pasta Salad

Tomorrow is National Night Out. If you haven't already, please contact your neighborhood sponsor and ask for details. Kit, the boys and I are very excited! This will be our first year to attend and a great chance for us to get together with new families in the area. We're hoping to meet future playmates, potential babysitters and new friends. I'm not sure about everyone else's party, but ours is a potluck. We were assigned paper plates and I volunteered to make a pasta salad. I've actually never made one before. But Kit and I spent this weekend experimenting in the kitchen and came up with a really great recipe! Surprisingly good! I might even go as far as to say, this is the best thing we have ever cooked! Needless to say, you must try this at home! So, without further ado, here is our greatest creation, up to date: Smoked Mozzarella Pasta Salad. Enjoy!

Smoked Mozzarella Pasta Salad
serves: a big party

32 oz. penne pasta
30 oz. olive oil mayonaise
4 oz. smoked mozzarella
8 oz. regular part skim, low moisture mozzarella
8 cloves garlic
1/3 cup canned spinach
3 tablespoons fire roasted canned tomatoes
1 teaspoon cayenne powder
1 cup feta cheese
salt to taste

1. Heat a large pot with boiling water and cook penne for 8-10 minutes


2. Drain penne while rinsing with ice cold water, then set aside in a large bowl

3. With a food processor or blender, chop the garlic and tomatoes


4. On a cutting board, cut the regular and smoked mozzarella into bite sized cubes

5. In a medium mixing bowl, combine the following ingredients:
garlic/tomato mixture, olive oil mayo, cayenne, salt, spinach and mozzarella cubes


6. Pour the sauce into the bowl of pasta and toss until every noodle is coated 


7. Cover the large bowl with plastic wrap and chill in the refrigerator for at least 2 hours


8. Before serving, sprinkle feta cheese on top of the pasta
